There are a few times of the year when the grocery store really excites me and berry season is one of them. I love walking into the produce section to see an abundance of ripe organic berries on sale! It’s a very inspiring time culinary speaking. From smoothies to crumbles, I indulge in all the antioxidant goodness.
However, despite my best efforts, a carton or two seem to slip through the cracks of my busy schedule and go bad. Oh, the shame!!! Well, friends, I have a quick and tasty solution to the berry-go-bad crisis. White Chocolate Blueberry bits! Hello yum, welcome to the party! Oh, and I see you have brought visually stunning with you, nice! That’s right, I just went there, I’m that excited with how these little gems have turned out!
Big, beautiful, organic berries are the star here, and unlike its chocolate dipped cousin, this bite allows the fruity goodness of the blueberry to shine through in all its seasonal glory. Served chilled, you will first experience the snap of the cold chocolate followed by the burst of the sweet blueberries. It’s not until you chew for a moment that all the creamy decadent flavors of the white chocolate emerge. They really are heavenly morsels.
I served them on a cheese plate to a friend and they were a hit. The blue marbled chocolate and fresh blueberries looked uniquely stunning among all the savory treats. They were awesome to snack on all night while we chatted. She even took a bag of them home with her to take to work the next day!
These bits only call for three ingredients and take 10-15 minutes to assemble. Perfect for that batch of berries you don’t want to spoil. I used high-quality white chocolate melting wafers for the base that I molded with a candy piping bag. You could easily snip one of the corners of a sandwich bag and get a similar result. Then I used a little blue food coloring and a toothpick to make the marble swirls. Finally, I plopped a couple berries on top and put them in the fridge to set. It’s an easy, no-stress process here friends.
What’s also great about this concept is you could really put any type of berry you want on top, or even sub out the white chocolate for dark. The world is your oyster with this technique! I really hope you enjoy these mouth-watering blueberry bites as much as we did.
