HELLO FALL! Thank you for saving this desert dweller from the heat! I’m so ready for comfy sweaters, boots, pretty fall decorations, scary movie nights in, cozy blankets, and healthy pumpkin spice lattes!
I’m the first to admit autumn brings with it some extra calories. So I thought this year I would add some nutrition to my PSL to help balance out the copious amounts of snickerdoodles I plan on eating! So, let’s welcome cashew pumpkin spice latte to the building!
Though this latte is chock-full of natural healthy ingredients, it feels seriously indulgent. The blended cashews turn into a frothy milk that complements the pumpkin perfectly. Then we add spice! Oh yes, I’m talking about pumpkin pie spice in all of its autumnal glory!
After that, to add a little extra nutrition and frothy magic to our drink, I added a tablespoon of coconut cream powder. Finally, a dash of vanilla extract and maple syrup round out our healthy recipe with comfort and sweetness!

Kick the fall season off with a healthy twist on the PSL. Cashews and other all-natural ingredients come together to create a decadent cashew pumpkin spice latte!

- 1 cup cashews soaked overnight
- 1 cup hot coffee strong brew
- 1 Tablespoon Vanilla extract
- 1 Tablespoon coconut cream powder optional
- 1/2 teaspoon pumpkin pie spice
- 2 Tablespoons canned pumpkin puree unsweetened
- Soak one cup of cashews in water overnight.
- Strain the cashews and discard the water.
- Add all of the ingredents to a blender and blend for about a minute or until the mixture is smooth and frothy.
This is the perfect way to welcome Fall!!! So so good!
