Vanilla marshmallows & Mint marshmallows
Try making your own marshmallows for your next s’mores event. Here are couple recipes one for vanilla and one for mint! Your friends and family will love these homemade treats!

Ingredients
Vanilla marshmallows
  • 3packets unflavored gelatin
  • 1 1/2cups granulated sugar
  • 1cup Water
  • 1/2cup chilled waterfor gelatin bloom
  • 1cup light corn syrup
  • 1Tablespoon Vanilla extract
  • 1/4 cup Powdered sugarfor coating
  • non-stick cooking spray
Mint marshmallows
  • 3packets unflavored gelatin
  • 1 1/2 cups granulated sugar
  • 1cup light corn syrup
  • 1cup Water
  • 1/2cup chilled waterfor gelatin bloom
  • 1Tablespoon Vanilla extract
  • 1teaspoon mint extract
  • 1/4cup Powdered sugarfor coating
  • 3-4drops mint food coloring
  • non-stick cooking spray
Instructions
  1. Prepare an 8×8 inch baking dish by coating it with non-stick baking spray. Then using a sieve coat the dish with powdered sugar. Next, coat a spatula with cooking spray and set aside.
  2. In a cup combine the gelatin with 1/2 cup chilled water. Let the mixture bloom.
  3. In the meantime combine the sugar, corn syrup, and 1 cup of water in a medium sauce pan. Do not stir. Cook over medium heat. Dip a basting brush in water and brush the sides of the pan occasionally to prevent crystals from forming.
  4. Once the mixture reaches 250 degrees on a candy thermometer remove the mixture from heat.
  5. In a mixing bowl with a mixer on low speed, SLOWLY add the candy syrup to the gelatin. Gradually turn the speed up to high (about 6 on a kitchen aid). Whip until the mixture turns white and shiny, about 10 minutes. Add the vanilla extract. Mix for about 5 more minutes so the marshmallow is thick and fluffy.
  6. Pour the mixture into the glass dish you have prepared. Use the spatula covered in cooking spray to scrape out the mix from the bowl. Use a sieve to dust the top of the marshmallows with powdered sugar. 
  7. Cover with saran wrap and let sit overnight.
  8. Dust a cutting board with powdered sugar and use a pizza cutter or a sharp knife to cut the marshmallows into cubes.
Mint marshmallows
  1. To make mint marshmallows follow the instructions above for the vanilla marshmallows. When the recipe calls for vanilla extract add the mint extract and the food coloring aswell.
