I remember the first time I came across purple cauliflower I got super excited but was nervous about the flavor. To my surprise, it tastes surprisingly similar to regular cauliflower. Though each variety of cauliflower tastes almost the same they do however contain different vitamins and antioxidants. Purple cauliflower gets its color from the antioxidant anthocyanin, the same antioxidant that can be found in red wine! While the orange cauliflower is full of beta-carotene, which is great for skin and eyes. This roasted rainbow cauliflower recipe brings each of these colors together for a seriously vibrant side dish.
I am in love with this recipe, it’s got it all, tang from lemon juice, savory from the garlic, freshness from the dill weed, and the salty richness of shredded parmesan. Because you will need three heads of cauliflower to make this recipe it works great for a party just double up the spice ingredients. Not to mention a rainbow side dish is a guaranteed crowd pleaser. However, If you want to make this recipe for just a couple people simply cut up the other heads of cauliflower and toss them in the freezer.
