The idea for this recipe was stuck in my head like a favorite song. I had an idea of the ingredients I wanted to use, and I thought this pumpkin pie oatmeal was going to be as easy as, well, PIE to make. I went to the store, carefully picked my ingredients and headed home to create the recipe of my dreams.I put together my ingredients and gave my professional taste tester (my husband) a sample. To my surprise, he vetoed my first batch, my second batch, and even my sixth batch.
See friends, here’s the thing, there are cake people and there are pie people. These are the facts of life, and my very handsome husband is a hardcore pie dude. Not just any pie, he lives for seasonal pies. Pumpkin being at the top of his list. This project ended up becoming a team effort, which was actually really fun!
I made this oatmeal at least eight times before he would give it his seal of approval. He kept saying it needed more pumpkin. So finally I decided I was going to blend the dates and the pumpkin and cook them a little before adding them to the oats. Turns out, that did the trick, cooking the mixture really brought out the flavor of the pumpkin. It just needed a little acid (lemon juice) and we were in business.
This pumpkin pie oatmeal is healthy, vegan, sweetened naturally, and full of fall time spice. It’s a bowl full of warm comfort food for breakfast! How could you go wrong? Plus, it’s “pie dude” approved!
