Peach and Ginger Popsicles

Ingredients
Popsicles
  • 6Medium Organic Yellow peaches
  • 1/2Cup Water
  • 1/2 Cup Organic Coconut palm sugar
  • 1 1/2 Inches Organic GingerPeeled
  • 1/2Teaspoon Organic lime juice
  • 4Tablespoons Coconut sugar Simple syrupRecipe below
Coconut sugar simple syrup
  • 1/2 cup Organic Coconut palm sugar
  • 1/2cup Water
Instructions
Coconut sugar simple syrup
  1. To a small sauce pan add 1/2 cup coconut palm sugar and 1/2 cup water. Boil on medium for 1-2 minutes then reduce heat to low for 3 minutes or until sugar granules dissolve. Whisk every so often.
  2. Remove from stove and set aside to cool. Extra syrup can be stored in the fridge.
Popsicles
  1. Peel 90 percent of the skin off the peaches. Leaving a bit of skin adds flavor to your pops! Then remove the pits from the peaches.
  2. Peel ginger.
  3. Add peaches, ginger, water, lime juice, and simple syrup to a blender. Blend until mixture is smooth.
  4. Pour mixture into popsicle molds, add sticks, and cover. Place into the freezer for at least 5 hours.
  5. EAT! EAT! EAT!
