Peach and ginger may sound like an unlikely pair, but I promise you they are absolutely the best of friends! This awesome combination of sweet and spicy is exactly what your summer has been missing. I never expected the unique duo to blend together so well, but it was like they had been separated at birth. They are soulmates! Meant to be together so I could make them into popsicles and then eat them while I catch up on episodes of Fixer Upper.
Which is exactly how last night went by the way… Because I know what’s in these bad boys – nothing but nature – it was refreshing to indulge guilt-free! Peaches, ginger, lime juice, coconut palm sugar, and water are the ingredients for this fruity treat with a twist.
These popsicles are crave-worthy and simple to make. It will only take you 15 minutes to prepare them plus a few hours to freeze. So set your DVR to record your favorite show, then get ready for a comfy night in with a healthy, natural dessert!

- 6 Medium Organic Yellow peaches
- 1/2 Cup Water
- 1/2 Cup Organic Coconut palm sugar
- 1 1/2 Inches Organic Ginger Peeled
- 1/2 Teaspoon Organic lime juice
- 4 Tablespoons Coconut sugar Simple syrup Recipe below
- 1/2 cup Organic Coconut palm sugar
- 1/2 cup Water
- To a small sauce pan add 1/2 cup coconut palm sugar and 1/2 cup water. Boil on medium for 1-2 minutes then reduce heat to low for 3 minutes or until sugar granules dissolve. Whisk every so often.
- Remove from stove and set aside to cool. Extra syrup can be stored in the fridge.
- Peel 90 percent of the skin off the peaches. Leaving a bit of skin adds flavor to your pops! Then remove the pits from the peaches.
- Peel ginger.
- Add peaches, ginger, water, lime juice, and simple syrup to a blender. Blend until mixture is smooth.
- Pour mixture into popsicle molds, add sticks, and cover. Place into the freezer for at least 5 hours.
- EAT! EAT! EAT!
