We have been making an effort to prep our food ahead of time, which means cooking lots of lunches in advance. I try to make a few sides in large batches in order to save time. I’m excited to share one of my favorites with you today – an amazing quinoa goat cheese salad! Crunchy red peppers and refreshing cucumber add flavor and texture while parsley adds an earthy depth. Next, comes the red wine vinegar for a bit of tang, followed by the wonderful flavor of, wait for it…. Roasted garlic powder.
Now I’m sure you have tried garlic powder in your previous cooking adventures, but trust me when I say roasted garlic powder is where it’s at! Its flavor is so much more intense. Last we welcome soft goat cheese to the party. This cheese makes the dish feel so indulgent, I almost forget about all the nutrients from the quinoa and veggies! It really helps to bring all of the ingredients together.
Keep in mind that this salad is the perfect base for chicken or shrimp. You can easily grill up your choice of protein in advance then mix it with your salad in the morning before work. Let’s get to it, shall we?
