Weeknights have been really busy lately. To be honest we have been eating a lot of avocado toast for dinner. Which is delicious! However, during the holidays, I could tell my body was in serious need of some extra nutrition. The cold weather paired with all the sugar consumption had taken its toll. A 30-minute detox soup was the solution to all my nutrition problems.
This recipe is delicious and easy to make. What’s also great is you can use the veggies you have in the fridge! Everything besides a few constants such as turmeric can be swapped out for something else. No broccoli on hand? Use cauliflower! What stays the same is the broth, seasoning, canned tomatoes, ginger, and fresh parsley. These are the key ingredients that make this plant-based soup so healthy and delicious.
Zoodles are an easy way to add texture and sustenance to your soup. Or you can try adding cooked quinoa!
